Berry Cheesecake
My favorite weekends are usually those spent in the countryside. Especially if I have the best of people around me, and we cook up something crazy delicious!
One of my favorite desserts to make there is cheesecake because it's refreshing, moist, and so fulfilling that I am happy with one piece. I have a recipe for a basic cheesecake I make, but as I swing most of my cooking, don't expect an exact result. I am not giving you the correct measurements.
YOU NEED:
caramel cookies (preferably biscuits - I use Lotus)
3 tbsp of butter or coconut oil
around 400g of cream cheese (Philadelphia, Gervais, Ricotta or some other what you have available)
1 (or two) organic egg yolk
3 tbsp sugar (you can use brown sugar or fructose, but I wouldn't do liquid sweeteners like agave syrup or honey as it will liquefy the cheese even more)
zest from organic lemon
some berries or fruit you love
mint to decorate
STEP-BY-STEP:
Crush those cookies in a blender or mortar (I use mortar to get out the build-up anger) and mix it up with the melted butter.
Press the cookie mixture into the cake form and let chill for about an hour.
Mix the egg yolk into the cream cheese until it's really smooth and light yellow and add sugar.
Pour into chilled cookie mixture, spread evenly, and let it settle for a couple minutes. Then add berries.
Chill for another hour, and you can serve. Garnished with mint leaves.
